Eric was born in Trinidad and Tobago where he began an eclectic start to his cooking career. Eric’s home island is filled with influence from South America, Africa, India, and Europe. Food is culture in Eric’s home and he has taken that philosophy with him on his culinary journey.

Eric’s career has taken him from a small family restaurant outside of London, to lobster boats in New England, and one of Tom Colicchio’s restaurants in New York. After all this Eric moved to Vail to find a different lifestyle. He has done a wide variety of natural cooking here in Colorado, and is instrumental to the Yellowbelly food culture. Sourcing products from local farms, and innovating foods that people love are a few of his passions. Eric lets the ingredients guide his art.
