Vail-based fast-casual chicken chain grows in Denver area with new funding

Yellowbelly Chicken began as a simple, unconventional idea — to offer healthier and cheaper chicken, in a fast-casual setting, to the Vail Valley.

But five years into its existence, it will turn Wednesday into a five-location concept that’s raised nearly $800,000 in funding and has its sights set on more significant growth in the year to come. And co-owner and co-founder Michael Friedberg thinks the chain finally has found a way to convey its vision fully. </br>
