I first heard about Yellowbelly Chicken when Michael skateboarded himself over to my yoga studio in The Village. He warmly invited me over for a quick meal on the house. He was so welcoming, I didn’t have the heart to tell him that I don’t eat fried chicken!

From the moment I stepped into his restaurant, I was smitten.

The smell of gluten-free fried chicken had me at cock-a-doodle-doo (that’s how chickens say hello, right?).

But, I had to stop right there. I don’t eat fried chicken, even if it is gluten-free. I’m an advocate of the paleo lifestyle and fried chicken just isn’t an option.

And yet again, the not-so-literal smack in the face about how hard it can be to find restaurants that offer paleo-friendly menu options, much less a paleo-friendly restaurant.

And then that “weird-diet” panic set in.

Oh, come on. You know what I’m talking about. My internal dialogue kicked into high gear and went something like this, “Damn. Ok, well, you DID know that it was a fried chicken joint before you walked in here, so, what did you expect?  Story of my life… oh, to be the squeaky wheel! I bet they don’t even know what the paleo “diet” is. Oh, shut up! Just. Stop. Talking. and prepare yourself to have to explain, yet again, the things you can and cannot eat.”

Boy, was I wrong! After a quick and joyful conversation with Michael, I found that my “crazy” lifestyle and way of eating was more than welcome at Yellowbelly!

Yellowbelly opened it’s Boulder location last year, during a time when many other healthy restaurants were popping up all over town. Although it is not hard to find a plethora of healthy eating options in Boulder, Yellowbelly certainly does not fall short with their offerings.

I’m currently crushing on their Spinach and Goat Cheese Salad with Roasted Chicken. I know, I know – goat cheese isn’t always considered paleo – so, I do make a few modifications – no goat cheese, add roasted carrots. Yup, I’m that girl. If you want to try my variation of Yellowbelly’s Spinach Salad, just ask for the Kelly salad – they’ll know what you are talking about!
